Pairing: cheeses with intense flavors, marbled red meats and less noble cuts such as diaframma and anchovies on BBQ. It can amaze with great raw dishes: scampi, prawns or beef tartare with just a drizzle of evo oil. It is also perfect for dunking Sbrisolona in. In northern cuisines it is used with oily or deep-sea fish, in the Far East with salmon sashimi and umami dishes.

  • Corvina, Corvinone, Rondinella, Oseleta, Croatina

  • Guyot with 5000 vines per hectare, 8 buds per vine. Green cover between the rows. Average age of the vines: 16 years.

    Hand harvesting of selected bunches during the second half of September, with slow drying in the drying room until January.

  • Crushing and pressing of de-stemmed dry grapes in january. Fermentation at a controlled temperature of 24°C. Maceration of the must for 25 days in contact with the skins, with daily pumping-over. Malolactic fermentation.

  • Maturation in tonneaux and in large casks for 30 months. Refinement in the bottle for 12 months before commercialization.
