Pairings: rich, marbled red meats, traditional stews such as beef cheek and braised game. In transalpine cuisine it finds excellent companions in scallops or venison carpaccio. It goes well in oriental cuisine with lacquered pork or duck and grouper.

  • Manual from single vineyard estate-grown.

  • Drying for about 3 months, manual crushing and destemming. Fermentation in 4.0 ceramic amphorae.

  • 12 months inside 4.0 ceramic amphorae, then French oak tonneaux for about 2 months. A bottle rest of about 60 months followed.
